<p>Today I'll bring you the POKETINHO to my place but unlike the other videos we won't be in the kitchen but in the front of the place or where our customers are welcomed and served.</p>
<p>To play Cicerone there is Sara, a collaborator of mine, of whom I have the utmost trust and esteem, a very young girl but who in a short time conquered the Hall and became its owner... or almost :).</p>

<p>Today we are preparing a Poke in the smaller version of what we call kinder.</p>
<p>We will make one of the most classic dishes they ask for, namely the one that goes for the most and is composed for</p>
<ul>
<li>100 grams of sushi rice</li>
<li>50 grams of raw salmon</li>
<li>50 grams of edamame</li>
<li>50 grams of avocado</li>
<li>Teriyaki sauce just enough</li>
<li>And fried onion as if it were raining.</li>
</ul>
<p>The preparation of these ingredients is easy and fast and the only thing that takes time is to clean and cut the salmon but now we have become experts by consuming almost 3 kg of this delicious fish every day.</p>

<p>Rice is the sushi one, the most loaded with starch ever, for this hyena washed until the water becomes cloudy of starch to crystalline and once cooked it is mixed with rice vinegar that gives it a boost of flavour and flavour.</p>

<p>The edamame are cooked in water and as soon as it is boiling they are drained while the avocado, as seen in the video, is freshly prepared to prevent it from blackening.</p>

<p>Sauce to taste, teriyaki is the sweetest sister of soy, it is also called sweet and sour sauce and is the most requested sauce, perfect for every type of ingredient.</p>
<p>To finish, sprinkle with fried onion that just looking at it makes your mouth water and enjoy your meal!</p>

<li><em>OLIODI OLIVA</em>: quanto basta</li>
</ul>
<p><em>Small note: as you can see the ingredients are few and are a bit according to taste, you could add paprika or rosemary, as mentioned before you can customise in various ways, let's say that the potatoes you make are always good!;)</em></p>

<p>STEP 1<br />
<em>The preparation of potatoes</em></p>
<p>Let's start by taking a kilogram of potatoes and peel them with the appropriate tool.</p>
<p>Once this is done, I give it a wash because in any case they get a little dirt dirty and immediately after I cut into cubes all the potatoes with a more or less homogeneous size of 1 cm x 1 cm.</p>
<p>I'll dine them all in cubes and wash them a couple of times to remove some starch.</p>

<em>La cottura</em></p>
<p>In a pot we put water to boil and once it brings it to a boil we throw in all our potatoes for 8/10 minutes over medium-low heat. (The water must simmer gently)</p>

<p>Taste them from time to time to find the suitable cooking for you, drain them from the water and put them in a bowl.</p>
<p>Season everything with salt, parsley and a little oil.</p>

<p>Hello friends!</p>
<p>Today I present you a side dish that in our Poké, which we prepare here in the store and it goes like hot cakes.</p>
<p>Completely vegan side dish but that goes well with everything whether it's a fish or meat dish or simply eaten alone.</p>
<p>We won't wait any longer and let's prepare this colourful and tasty dish starting from the ingredients to the execution:</p>
<p><strong>INGREDIENTS</strong> (4 people)</p>
<ul>
<li><p><strong>CARROTS</strong>: 300 grams</p></li>
<li><p><strong>ZUCCHINI</strong>: 300 grams</p></li>
<li><p><strong>COPPER OR RED ONION</strong>: 450 grams</p></li>
<li><p><strong>SALT</strong>: just enough</p></li>
<li><p><strong>Sunflower seed oil</strong>:  just enough</p></li>
</ul>
<p><em>Small note use the salt to your own taste while for the oil it is preferable to "sing" the vegetables from the beginning of cooking until the end, making a few refills from time to time but here too it goes a bit to taste.</em></p>

<p><strong>STEP 1</strong><br />
<em>The preparation of vegetables</em></p>
<p>Let's start with the carrots after peeling them we cut them into matches, being careful not to cut your fingers eh! ;)</p>
<p>The same goes for Zucchini, here the process is a little simpler because zucchini are softer.</p>
<p>The result must be more or less like the one in the photo.</p>

<p>We continue with the preparation of the onion, the latter can be cut coarsely because it will wither in the pan and if cut too small it will easily burn or disappear.</p>

<em>The cooking</em></p>
<p>We take a pan with a wide bottom and sprinkle with oil we turn on over medium heat and once the oil is heated we throw in the onion making it wither as in the photo.</p>

<p>At this point, we add our carrot matches.</p>
<p>The cooking will be about 5 minutes the carrots have to be stewed as soon as I don't lose their crunchiness.</p>
<p>Add enough salt to your palate and after about 5 minutes we also add the zucchini sticks, a process similar to carrots then cook onion carrots and as a last the zucchini another 5/6 minutes.</p>

<p>Let’s start by washing and drying the eggplant and then cutting it to</p>
<p>Large cubes because they will tighten a lot during cooking.</p>
<p>In a pan we put the oil and a clove of garlic and once the latter is browned we throw in the eggplant.</p>
<p>Cook for a few minutes over high heat and then lower the heat and put the lid on for another 5/6 minutes.</p>
<p>Once cooked, add salt and parsley, mix and cook without a lid for another 2/3 minutes.</p>
